Grilled Adobo Carne Asada Steak with Pineapple

Ingredients
For the Marinade:

2 lbs flank steak or skirt steak

3 chipotle peppers in adobo sauce (plus 2 tbsp of the sauce)

¼ cup fresh lime juice (about 2 limes)

¼ cup fresh orange juice (about 1 orange)
-
½ cup fresh pineapple juice (about 1 small pineapple)

3 tbsp olive oil
-
4 garlic cloves, minced
-
1 tbsp apple cider vinegar
-
1 tbsp soy sauce
-
2 tsp ground cumin
-
2 tsp smoked paprika
-
1 tsp oregano
-
1 tsp salt
-
½ tsp black pepper
For Grilling & Serving:
-
1 tbsp olive oil (for grilling)

1 small pineapple, sliced into rings
-
Warm tortillas
-
Chopped cilantro
-
Diced onions
-
Lime wedges
-
Salsa of choice
Instructions
1. Marinate the Steak
In a blender or food processor, combine chipotle peppers, adobo sauce, lime juice, orange juice, pineapple juice, olive oil, garlic, vinegar, soy sauce, and all spices. Blend until smooth.
Place the steak in a large resealable bag or shallow dish. Pour the marinade over the steak, ensuring it’s well coated. Cover and refrigerate for at least 2 hours (or ideally overnight for maximum flavor).
2. Prepare the Flatpack Grill
Get a fire going on your UCO Medium Flatpack Grill or the UCO Smokeless Grill & Firepit. Make sure the grilling surface is clean and lightly oiled to prevent sticking.
Add the pineapple rings to the grill first. Grill for 2-3 minutes per side, or until you get nice grill marks and the pineapple is slightly caramelized. Remove from the grill and set aside. UCO's Grill Tools make grilling a breeze.
3. Grill the Steak
Remove the steak from the marinade and shake off any excess. Grill for 4-5 minutes per side for medium-rare (adjust for desired doneness).
Transfer the steak to a cutting board and let it rest for 5-10 minutes to lock in juices.
4. Slice & Serve
Slice the steak against the grain into thin strips.
Serve in warm tortillas with grilled pineapple, cilantro, onions, lime wedges, and your favorite salsa.
